Roast: Completely thaw under refrigeration 48 - 72 hours prior to cooking. Preheat the oven to 375°F. Remove stuffing pack from the center of the roast and allow the roast to sit at room temperature for 1 hour. Season the roast with Olive Oil and coat with salt and pepper. Place the roast on a rack or in a roasting pan. Place in the center of the oven for approximately 2 hours or until the internal temperature is 145°F. Stuffing: Thaw the stuffing in the refrigerator. Remove from the bag and place in an oven safe pan. Spread evenly and bake for approximately 30-40 minutes. Once cooked place stuffing back in the center of the roast and enjoy.
