Completely thaw under refrigeration 24-48 hours prior to cooking. Preheat the oven to 350°F. Gently brush the roast with olive oil, salt and pepper. Place the roast in a roasting pan and cover with aluminum foil for half of the cooking time. Bake for approximately 35-40 minutes or until the internal temperature reaches 135°F for medium (recommended). Once cooked remove from the oven and let in rest for approximately 15 minutes before slicing.
