Sweet Potatoes and Spinach

Roasted sweet potatoes are combined with fresh spinach in a light Thai curry sauce with a hint of spice. It makes a wonderful side or vegetarian entrée, and it will transport you to faraway lands. One of our new favorites! 

Microwave: Cook from thawed. Leave film intact. Heat on medium microwave power for 1 minute and 30 seconds to 2 minutes and 30 seconds. until fully heated. Microwave and plate will create steam vent and self-ventilate. Remove from microwave and rest for 60 seconds. Microwave times may vary.

Cook from thawed. Cut the film in a "U" shape around the perimeter of the meal, peel plastic back and transfer meal to a pre-heated (medium) lightly oiled skillet for 3-5 minutes, stirring frequently until fully heated to 165°F.
