Simple enough for every day, this is also a meal you can serve for any special occasion. You'll start with Italian Arancini—the classic Italian risotto appetizer. The star of the meal is Cedar Plank Salmon, with sweet, peppery notes from the marinade and a subtly sweet, smokey flavor from the cedar plank. It pairs well with our Vegetable Potato Medley, featuring asparagus, green beans, and mushrooms. End the meal with individual Pineapple Upside-Down Cakes, a dessert classic. A supremely satisfying meal. Serves 4.

Our Cedar Plank Salmon Dinner includes:

4 - Cedar Plank Salmon (6 oz. each): salmon marinated with complementary flavors of brown sugar, black pepper, garlic, and lemon atop a cedar plank
24 - Italian Arancini: made with fine Italian sausage, roasted peppers, caramelized onion, garlic, and a touch of spinach, rolled in bread crumbs
1 - Vegetable Potato Medley (1 lb.): par-fried potato rounds mixed with tender asparagus, button mushrooms, and green beans, then flavored with oil, parsley, and garlic
4 - Pineapple Upside Down Cakes (5 oz. each): moist cake with a sweet pineapple ring topping, drenched in a rich, brown sugar sauce

Cedar Plank Salmon: Please keep frozen until ready to use. Thaw under refrigeration for 24 hours before cooking (product is uncooked). Cook within 1 day after thawing.
Grill (Preferred Method): Preheat grill to med-high heat (approximately 375⁰F). Place the salmon and plank directly on the grill and close cover for approximately 10-13 minutes or until internal temperature of the salmon reaches 145⁰F.
Conventional Oven: Preheat oven to 375F . Place the salmon and plank on a baking sheet prior to cooking. Bake for 10-13 minutes or until core temperature reaches 145⁰F.
Ovens & grills vary; cooking times vary and may need to be adjusted. Do not overcook. Salmon is cooked when it becomes opaque, flakes apart, and when it is still slightly pink in the center of the fillet.

Italian Arancini:
From Frozen: Preheat oven to 425°F. Spray cookie sheet with non-stick spray and bake for 12-13 minutes until internal temperature is 165 degrees F. For best results, turn after 7 minutes. Let stand 2 minutes before serving. If defrosted, reduce cooking time.

Vegetable Potato Medley:
Skillet: Cook from frozen. Preheat skillet on medium heat. Add frozen vegetables and cook for 4-5 minutes without stirring. After 5 minutes continuously stir and cook for another 5-6 minutes.
Microwave: Place in a microwave safe bowl and cover. Microwave on high for 6-7 minutes, stirring halfway through. Let rest for 2-3 minutes before serving.
To ensure food safety, cook to 165°F throughout.

Pineapple Upside Down Cake: Keep frozen until ready to use.
Oven: Remove film from container and place frozen cakes in cups right side up on sheet tray. Bake at 350°F for 14-16 minutes. Let cake stand in cup for 2 minutes. To serve, invert cakes onto serving plate and remove cups.
Microwave: Remove film from container and place frozen cake in cup right side up on a microwave-safe plate. Heat on high for 50-60 seconds. To serve, immediately invert cake onto serving plate and remove cup.
