Eggplant Parmesan for Two


A classic recipe is superbly executed in this hearty gourmet single pan meal. The eggplant cutlets, breaded and lightly fried, are paired with a robust tomato sauce and a rich blend of creamy Mozzarella and sharp Pecorino cheeses. Just add a simple salad for a meal reminiscent of a Roman trattoria. This Eggplant Parmesan single serve dinner is 18 oz., but can serve 2-3.

Oven: Preheat oven to 40°F. Remove lid from tray and cover with foil. Place tray on baking sheet in center of oven. Cook from frozen for 40-50 minutes. Verify internal temperature reaches 165°F. After cooking, let stand for 3 minutes.

Microwave: Remove lid from tray and loosely cover tray with microwave safe plastic wrap. Cut vents in plastic and place try on a plate or glass dish. Place plate in center of microwave. Please ensure tray does not contact sides of the microwave. Heat on high power for 10 minutes, Then heat on medium power for an additional 8 minutes, After cooking, let stand in microwave for 3 minutes.
