There are many who believe that spatchcocking a chicken (by removing the backbone and cooking it flat) results in the juiciest, most flavorful bird. Add in the mojo brine (with the flavors of lemon, garlic and pepper) and you have a bird fit for a king. Arrives ready to grill or bake, with sliced lemons on top for extra flavor and garnish. 2 3/4 to 3lbs.,serves up to 6.
Thaw under refrigeration for 24 hours prior to cooking. Grilling Instructions: Preheat grill with one side on high and the other side on low. Remove chicken from the package and place the chicken skin side up on the high side of the grill for 5-10 minutes and close cover. *keep an eye out for flare ups.* Uncover and move the chicken to the low side of the grill and cook for 30-40 minutes and close cover. Check the temperature of the chicken using a food thermometer on the thickest part of the chicken until it reaches 165°F. If more time is needed, turn the chicken skin side down and continue to cook until it reaches desired temperature and color. Oven Instructions: Preheat oven to 375°F. Place the chicken in a roasting pan. Cook for 60-70 minutes or until it reaches an internal temperature of 165°F as measured by a food thermometer. Let it rest for 5 minutes before serving.
