Oven: Refrigerate for 24 hours. Preheat oven to 400°F. Remove Chateaubriand roast from the vacuum package and place on a wire rack in a shallow baking pan (may also be cooked directly on greased pan). Cook for 20-25 minutes at 400°F, and then reduce oven temperature to 325°F and cook for an additional 20-30 minutes for medium rare (internal temp of 145°F). Increase or decrease cooking time to achieve desired result and monitor closely for the final 15 minutes as oven temperatures and cooking times can vary. Always use a thermometer. Once cooked, remove from oven and transfer to plate, and allow to rest for 10 minutes before serving.
