This spectacular beef entree will add elegance to any gathering. Tender, center-cut premium filet mignon is topped with a rich pate and mushroom mixture, and wrapped in buttery puff pastry, elevating it to true gourmet heights. Simply dazzling in appearance and flavor, this chateaubriand en croute will add elegance to any special gathering. Each 2 lb. chateaubriand roast serves 4-6.

Oven: Refrigerate for 24 hours. Preheat oven to 400°F. Remove Chateaubriand roast from the vacuum package and place on a wire rack in a shallow baking pan (may also be cooked directly on greased pan). Cook for 20-25 minutes at 400°F, and then reduce oven temperature to 325°F and cook for an additional 20-30 minutes for medium rare (internal temp of 145°F). Increase or decrease cooking time to achieve desired result and monitor closely for the final 15 minutes as oven temperatures and cooking times can vary. Always use a thermometer. Once cooked, remove from oven and transfer to plate, and allow to rest for 10 minutes before serving.
