Like a trip to the vegetable gardens of the French countryside, this Wellington is bursting with vegetables. It features portobello mushrooms, bell peppers, onions, zucchini, yellow squash, and eggplant, all wrapped in a luscious puff pastry for the perfect steakhouse side, or hearty vegetarian entrée. 

Cook from frozen, Preheat oven to 400°F. Remove from packaging and place on a lined baking sheet in the center of the oven. Bake until pastry is well browned and internal temperature reaches 165°F, about 30-35 minutes. Let rest for at least 5 minutes before serving. Cook thoroughly.

Baking Tip: Brush the pastry with egg wash before baking.
